We use only the finest seasonal Scottish seafood, meat, game and vegetables. We work very closely with our local suppliers to achieve exceptionally high standards of quality and fresh ingredients. This is one of the secrets of our success. Our oysters are hand-picked from the Lismore oyster beds; mussels and langoustines are harvested from Loch Linnhe and Loch Etive; and our lobsters and crab are kept mouth-wateringly fresh in creels at the end of the pier which guests may view, subject to tides.
